Smashed New Potatoes

Simple, classic, does the job. My smashed new potatoes. With it being new potato season, it would be rude not to make these really. 

This dish is incredibly straightforward and it’s what I whip out when I need a quick and tasty side for a summery inspired meal. Great served with lemon chicken skewers and roasted vegetables. You can also enjoy this with your BBQ, as part of a buffet spread or as the carb-y part of your dinner. It’s not a dinner without some carbs, let’s be honest. 

Why use new potatoes? 

New potatoes are great for this recipe as the waxy texture means they will retain their shape when cooked, you don’t have to peel them as they have a wispy skin (bonus) and they have a lovely sweetness to them which works well with the spring onion. With new potato season taking place between April – July, now is the time to make the most of them, although fear not, you can still buy these babies all year round so don’t worry if you’re reading this in January and think you’ve missed all the gooduns. This is the only time of year I properly deviate from a Maris Piper potato, and if you know me, you know how much I stan a Maris Piper.

I’ve thrown in a bit of spring onion and squirt of lemon juice with my crushed spuds but you can literally customise it however you want based on what you’ve got lying about in the kitchen. Throw in some bacon bits, black olives, herbs and spices or even a bit (or a lot) of cheese – I won’t judge. 

After you’ve selected your customised or standard recipe mix, you can get to the smashing part. I love this part as it somehow feels therapeutic. Plus, by using smaller new potatoes, it basically meant I could smash even more. Ideal for any built up anger or if you’re not very delicate in cooking.

Ingredients

  • 1.1lb new potatoes
  • 500g new potatoes
  • 2 tbsp butter
  • 2 tbsp butter

Method

  1. This one is so so ridiculously easy! Boil the spuds in salted water for about 20 minutes or until they are falling off the end of the knife. Don't let them get too mushy.
  2. Drain the water away and start smashing! Make it as lumpy and bumpy as you want.
  3. Add in your butter, spring onion, lemon juice and seasonings and give it a good mix. The simply serve up and go! I love to serve alongside lemon chicken skewers.
