Honey, Bacon and Feta Crispy Cubes

Nothing hits better than a mix of sweet and salty. I love this dish so much as it’s super easy to make and I usually eat a full bowl as a snack or as my lunch. You can always add a side salad or a few greens if you wanna up your veggie count, but I won’t judge if you smash the full lot.

The combo of flavours and textures within this dish is what really makes it stand out. You’ve got the CROUNCHIEST spuds, crispiest bacon, sweetest honey and creamiest feta all going on in there and it’s giving holiday vibes. Whenever I make these delicious feta crispy cubes, I feel like I should be sat on a balcony in the sun, post-shower, washing these spuds down with a Fanta Limon and packet of bacon Ruffles or Lays. You know the feeling.

When making my honey, bacon and feta crispy cubes, I do like to throw in some chilli flakes or the odd fresh chilli to add a lil spice, but that’s completely optional. What’s also great about this recipe is that you don’t need specific measurements, simply measure with your heart and you can’t go wrong. Ingredients

  • 4 Idaho Potatoes
  • 4 Maris Piper potatoes
  • 1 bulb of garlic
  • 1 bulb of garlic
  • 3 rashers of bacon, cut into pieces

  • 2 tbsp honey
  • 2 tbsp honey

Method

  1. Peel and chop your spuds into bitesize chunks, then put them in a saucepan. Cover with cold water and add 1 tbsp salt. Boil until tender.
  2. Preheat the oven to 200°C/400°F/Gas Mark 6.
  3. Drain the potatoes and leave to steam dry for 10 mins. To steam dry, simply leave them in the colander you drained them in and cover with a tea towel.
  4. Place an oven tray with a layer of veg oil into the oven to heat up.
  5. Wrap the garlic in foil with some oil.
  6. Place the cooked potatoes and garlic in the tray and roast for 30 mins. Then stir and roast for a further 10-15mins.
  7. In a frying pan, brown off your bacon.
  8. Once browned, add the honey and chilli, then the potatoes and a few cloves of cooked garlic. Toss it all together.
  9. Crumble over feta and parsley and serve! Enjoy!
